So, apparently I’m REALLY bad about keeping this updated….and I’ve made some really good meals in the past few weeks that I knew I wouldn’t have time to blog about so I just put out a mention of them on Facebook. I’ve decided to go ahead and include links or recipes for the meals I make daily even if I can’t include photos or detailed instructions. Mostly this will help me keep track of recipes so that I remember them and can hopefully make them again…and hopefully it will inspire you to try some of them! 🙂
Anyway, a quick rundown of the past few weeks:
-Cider Marinated Ribs (this was a mix of several recipes…basically the breakdown was using this rib rub and REALLY rubbing it into the meat. Then placing ribs in a large ziploc bag and filling the bag with cider to cover ribs. Marinate 12 hours or overnight. Ribs are cooked slowly in the oven at a low temperature to keep them moist and tender. You could also cook them on a grill. At the same time reduce 2 cups of apple juice to about a 1/2 cup and let cool. When ribs are done, brush them with apple glaze and broil for a few minutes so that the sugar caramelizes.)
–Greek Yogurt Chicken (the only adaptation I made to this recipe was to up the spices…instead of using seasoned salt I used a mixture of garlic and onion powder, paprika, salt, pepper, and a little thyme)
–Feta and Spinach Stuffed Chicken (serve this with orzo and an easy tomato and feta sauce…take a container of cherry tomatoes [or a can of drained diced tomatoes] and put in a hot pan with a little oil. Saute the tomatoes until they start to split. Add a little seasoning…garlic, salt, pepper, etc. and cook until tomatoes are tender. Turn off heat and add a few tbs of feta)
-Flat Roasted Chicken with Roasted Potatoes (from the Smitten Kitchen Cookbook which I highly recommend you add to your Christmas wish list!!)
